The Scandi hotspot in Amsterdam
In 1996, when Rikard from Sweden was an exchange student in Argentina, he met Nicolás and the two became firm friends. Nicolás later moved to Stockholm, trained as a barista and represented Sweden in the World Brewers Cup. Meanwhile, Rikard moved to Amsterdam. In 2013, Nicolás followed and they set up Scandinavian Embassy, with Rikard’s girlfriend, Dominika, an aspiring clothes designer.
Scandinavian Embassy has three specialties: food, coffee – or “fika” (a Swedish term for a coffee break) and fashion. While all three aspects will eventually be represented (Dominika is currently working on her first collection) the thing that really unites the embassy and its owners is speciality coffee, which they import from small, independent Scandinavian roasteries.
“While we serve all kinds of coffee, but something that’s really making a comeback at the moment is filter coffee,” says Rikard. “If you combine top-quality beans with this old-fashioned brewing method, you can achieve amazing results.”
“We work hard with our food-coffee combinations – finding the perfect bean for every dish. We believe coffee can be paired with food in exactly the same way as wine, providing you give it the same amount of attention,” adds Nicolás.
Scandinavian Embassy employs a multinational team, from Sweden, Norway and Denmark, as well as Iceland.
“We want to combine the best of everything,” says Rikard. “Just look at our signature dish, the salt cured salmon and poached egg. It consists of Norwegian salmon, Danish rye bread and Swedish caviar. You can’t get more Scandinavian than that!”
